From the red, green and blue components we calculate the Lab* values from which we then determine the Roche value. This allows a quick and clean determination of the yolk color.<\/p>\n\n\n\n<p>For the measurement, the egg is cracked on the worktable. If necessary, the egg white height is then measured. Then the yolk is positioned over the sensor and the measurement is triggered on the PC.
